Pug in the Kitchen’s homemade chicken noodle soup

OOOPS!  Apologies for my post yesterday which somehow did not work. I was attempting to re-blog (with permission) a beautiful looking chicken noodle soup posted by the lovely blog apuginthekitchen.

Something screwed up. The link did not work. So, I’m reposting (rather than re-blogging) today because I really love the look of this soup.

I’m away in Vermont for a month and missing my kitchen intensely. This soup made me hungry for home.

It also reminded me of my trip to Oaxaca, Mexico, last winter and a fantastic “Xochitl Broth” soup I had there in a sweet, trendy little restaurant called La Olla.

Xochitl Broth is similar to chicken noodle soup – only with rice instead of noodles. I don’t know if it’s always served this way all over Mexico – but La Olla served theirs artistically de-constructed – with individual scoops of shredded chicken, rice, chopped avocados, tomatoes, onions, chile and cilantro – all topped with a fresh chicken broth. Beautiful presentation and an exquisitely delicate and yet flavourful soup that I’ve thought of many times since.
